Octuplets!!

Husband informed me of this today, I don't know how I didn't hear about it seeing as I work in the wonderful world of multiple pregnancies!!!! I can't believe it though! They were apparently born in California yesterday. I am just truly amazed! We work with triplets and quads quite a bit, but wow octuplets!!!! I think I heard that they were born at around 31 weeks. Apparently they are all doing really well which is such a blessing!!! 

Oh yay it's on the news now!

Dash Down Greenville


This is our first 5K! I can't wait for it to get here! 

Mack's Sip N See

We had the honor of hosting Mack's Sip N See back in December, and I am just now getting around to posting about it! This was our first big get together in the new house. It was really fun decorating and planning for such a special little boy! The whole day went really well and lots of special people got to meet and spend time with the little Mackster!













The boys were exhausted after all the preparations!

Run update and a potential good recipe!

We did it! We actually ran for 20 minutes straight today! I was really nervous I would pass out b/c the longest we had run to date was only 8 minutes. I was shocked to see the next step up was 20 minutes!!!! It was so hard, but I found my rhythm and pushed through to the end. It felt to good! At work Thursday night Latrice calculated my running schedule until August. If all goes well I will be running my first half marathon August 23!!!!! I want to do this so bad! Our first 5K will be March 14. I think its called March Down Greenville in Dallas. 

Total weight loss so far: 4 pounds.

On to week 6 of our program!



Found this recipe today and wanted to file it away for future use...

Cherry Limeade Punch

1 can cherry limeade concentrate
1 bottle sprite
1 jar maraschino cherries
1 lime

Put in limeade and add sprite. Pour in the juice from the cherries. Then add the cherries and sliced up lime for look and taste.

Espresso Panna Cotta



I made this last week for husband, and it turned out so good! Very rich and tasty. I didn't have martini glasses so I split the contents into 4 wine glasses. That way we were able to have it for dessert 2 nights in a row! I also couldn't find the espresso powder, so I just used instant cappuccino powder. It felt very fancy and wasn't that hard to make.


Ingredients

1/2 cup whole milk
1 1/2 tsp unflavored powdered gelatin
1 1/2 cups heavy cream
3 heaping tsp instant espresso powder
1/2 cup sugar
1 small white chocolate bar, for garnishing
1 small dark chocolate bar, for garnishing


Directions

Place the milk in a heavy, small saucepan. Sprinkle the gelatin over and let stand for 5 minutes to soften the gelatin. Stir over medium heat just until the gelatin dissolves, but the milk does not boil, about 2 minutes. Add the cream, espresso powder, sugar, and salt. Stir over low heat, until the sugar dissolves, about 3 more minutes. Remove from heat and let cool slightly. Pour the cream mixture into 2 martini glasses, dividing equally. Cover and refridgerate, stirring every 20 minutes during the first hour. Chill until set, at least 6 hours and up to 2 days.

When ready to serve, use a vegetable peeler on the chocolate bars to create about 1 tablespoon each of the white and dark chocolate shavings. Sprinkle the shaving over each panna cotta and serve.

We have technology!

I can blog again! We got a Macbook after the holidays!!! We've been using the iphone for internet since August, so it's so nice to feel connected again!

What we've been up to...

  • Celebrated our 6 month wedding anniversary in December
  • Loving on our new nephew Mack who was born October 5
  • Decorating the house
  • Learning how to run! More specifically... working on the couch to 5K program. We are on week 4 and will be running our first 5K in Feb!
  • Cooking galore! I've used literally every single kitchen tool or utensil that we received for our wedding! 
  • We have a new member of the family- Jack! We adopted a kitten from Operation Kindness in September. Mr Lilly loves having a little brother.

Looking forward to getting into the blogging swing again. We about to go see Bride Wars!
